Apple Cinnamon Overnight Oats
Come to think of it, a lot of things happen at night. Celestial bodies come out to play. Plant life respires carbon dioxide. We get a much needed break from the laws of physics to time travel to dimensionless places. Just last night I met my 9th grade math teacher in the cafeteria of a great pyramid. When we really think about it, the night is a busy time of day. It serves an integral part in the great circadian rhythm of the planet, plants and people. Enter Overnight Night Oats and the nocturnally nutritious process that breaks down starch and infuses these mighty little seedlings with minerals to ensure they’re as digestion-friendly as they are delicious. The process is simple. We soak oats at night, adding spice and apples, cover and place in the fridge. Then it’s off to bed to visit impossible lands and reconvene with high school faculty members. All the while, Oats work the nightshift to make us breakfast.
Serves 2
- 1 cup water
- 3 tbs Planut Milk Oat Base
- 1/4 cup of oats
- 1 grated apple
- 2 tsp chia seeds
- ½ tsp ground cinnamon
- To serve: Fresh blueberries
Place water and oat base in a blender. Blend for 15 seconds. Place grated apple, oats, chia and cinnamon in a mixing bowl. Add blended oat milk and stir to combine. Divide mixture into 2 jars, fasten the lids and place in the refrigerator overnight. Serve with fresh blueberries.
